Healthy Kale Quinoa Power BowlHealthy Kale Quinoa Power Bowl is what was on the menu because I had the taste for an easy to make meal. Quinoa and kale have been a staple in our house and some of my favorite super foods so I had to add them in this power bowl recipe.

Healthy Kale Quinoa Power BowlOne thing I am learning as a healthy foodie is that simple is better. However, colors bring so much happiness to my taste buds that I wanted to reflect as much vibrancy in this healthy power bowl dinner as possible. In my home country of Cote D’Ivoire, proteins are a great addition to salads so I decided to incorporate one of our go to protein in this power bowl but any protein of your choice will do.

Healthy Kale Quinoa Power BowlWe haven’t had fish this week so I added some baked salmon to the Healthy Kale Quinoa Power Bowl for extra protein. Baked salmon is so easy to make that in less than thirty minutes, the Healthy Kale Quinoa Power Bowl was ready.  That’s a formula for a mom win!

Ingredients:

Baked Salmon

  • 1 whole salmon fillet
  • The WELLthy Mom GPS (Garlic Powder, Black Pepper and Sea Salt)
  • 2 cloves garlic
  • ginger garlic teriyaki sauce
  • Capers

Season salmon with The WELLthy Mom GPS.  In a separate bowl, mix together ginger garlic teriyaki sauce, capers and garlic. Top the salmon with the mixture and bake at 350 degrees for 30 minutes.

Power Bowl Dinner

  • baby kale
  • baby spinach
  • cooked rainbow quinoa
  • carrot sticks
  • baked salmon
  • cucumber
  • mini bell peppers

Arrange all the ingredients in a bowl however you like et Voila!  Bon Appetit!

Healthy Kale Quinoa Power BowlWe enjoyed the Healthy Kale Quinoa Power Bowl so much that we can’t wait to have it for lunch tomorrow.  Is it just me or food tastes even better the next day?  For my vegetarian or vegan readers, in place of baked salmon you can add some sauteed tofu, garbanzo beans or any other plant power protein selection.
