Ivorian Food Recipe of Pèpè Soupe (Ivorian Pepper Soup)

Ivorian Food Recipe of Pèpè Soupe is a dish that brings so many memories from my home country of Cote D’Ivoire and is mainly a pepper soup packed with ground food like yams and plantains, vegetables like aubergines (African eggplant) and okra, meat or fish. You can make this Ivorian dish plant-based for a healthy twist. The plant-based sauce of my choice is made with palm oil and I love that recipe when I fast.

Ivorian Food Recipe of AkpessiPalm oil is an edible vegetable oil derived from the reddish pulp of the fruit of the oil palms, primarily the African oil palm. Palm oil is naturally reddish in color because of a high beta-carotene content. Along with coconut oil, palm oil is one of the few highly saturated vegetable fats and is semisolid at room temperature. Palm oil is a common cooking ingredient in the tropical belt of Africa, Southeast Asia and parts of Brazil.

It’s also so good in the winter months or when under the weather. Today I am sharing the Ivorian Food Recipe of Pèpè Soupe because all you need to do for the vegan version is to omit the fish.

Ingredients:

  • 1 large African Yam
  • 3 yellow Plantains
  • 1 yellow yam
  • 4 King fish or swordfish steaks/fillets
  • 2 tbsp palm oil
  • 1 large Onion, sliced
  • 1 red onion, sliced
  • 2 cloves garlic, diced
  • 3 Tomatoes, diced
  • 2 scotch bonnet peppers
  • 2 cups of spinach (optional)
  • water
  • thyme
  • 1/2 lb whole okras
  • 1 large purple eggplant or 4 aubergines (African eggplants)
  • 1 chayote
  • LadyNOD GPS (Garlic powder, black Pepper and sea Salt)

Bring water in a pot to a boil.  Add yams, plantains, eggplant and chayote.  Let everything boil for about 25-30 minutes. While the ground food is cooking, you can start the sauce. Sautee the onions in the palm oil until translucent. Season with LadyNOD GPS. Add the garlic and tomatoes. Stir and add about 2 cups of water. Bring to a boil. Puree the eggplant and chayote in a blender and add the mixture to the sauce. Add the fish, thyme and okras. Add additional LadyNOD GPS, if needed.  Let it cook for about 20 minutes or until it thickens. Add the spinach and let it cook for another 5-10 minutes and voila.  Serve the yams and plantains in a bowl and top with the fish sauce. Bon Appetit!
