As a WELLthy family, our lifestyle is about whole wealth and wellness so we have set Saturdays as our Pancake days.  When I came across a video on Tastemade about Simple and Healthy Pancakes, I couldn’t wait to give the recipe a try. My four-year old was more than willing to help to make the delicious Peanut Butter Energy Pancakes because of the yummy perks.

As a busy mom, I am realizing the importance of involving our children in the day to day doing.  It gives them such a sense of responsibility and an opportunity for making WELLthy MOMents.  Babygirl and I decided to make Tastemade’s Peanut Butter Energy Pancakes for the family.

Peanut Butter Energy PancakesThe Peanut Butter Energy Pancakes recipe is so simple to make and the best part is to see the happy proud smile on Babygirl’s face.  These are the yummy and priceless MOMents in between.

I still remember growing up in Cote D’Ivoire around the kitchen with family and those memories have stayed with me.  Hubby and I do our best to encourage that tradition with our girls as well.  It takes a lot longer than planned but it’s all worth it!

 

 

Ingredients:

  • 2 Bananas
  • 1 Egg
  • 3 tbsp Peanut Butter
  • 2 cups Rolled Oats
  • 1 1/2 tsp Baking Powder
  • 1 1/4 cup Milk
  • 1 tbsp Maple Syrup
  • 1 tbsp Lemon Juice
  • 1 tbsp Vanilla Extract

Put all the ingredients in the blender and mix.  Spray a pan with oil and pour a scoop of the batter.  Turn when it starts bubbling.  Serve warm and top it with some banana slices and peanut butter.  Drizzle with additional maple syrup and Voila!  Bon Appetit!

Peanut Butter Energy PancakesWe were generous in making enough Pancakes batter for the family and Babygirl didn’t want her sisters to miss out because there is really nothing quite like the bond between siblings.  When Hubby and the girls heard the pancakes contained peanut butter, they were in heaven.  WELLthy Life is about all those sweet memories.
