We are learning more and more about Percy Jackson as we make our way through the Percy Jackson and the Olympians series currently streaming on Disney+. During our summer reading we discovered his love for blue foods which inspired us to create and enjoy these Percy Jackson and the Olympians Blue Pancakes. I have mastered a version of fluffy pancakes thanks to my niece and they are too yummy not to share.
There is nothing like a 12 hour road trip from Connecticut to Maryland and North Carolina to visit family and friends with the entire Percy Jackson and the Olympians series by Rick Riordan to get lost in a Greek mythology adventure. The Percy Jackson series is a 5-book series that has been on the New York Times bestseller list for over 500 weeks and is recommended for readers ages 8+. In the series, middle graders will learn about Greek mythology as the series offers readers a fresh and exciting way to learn about the Olympians, the Titans, the Minotaur, and more.
My oldest two are in Greek mythology heaven reading through the series for the summer. They have been devouring the books and are currently reading the fourth, The Battle of the Labyrinth. In the book, Percy Jackson isn’t expecting freshman orientation to be any fun, but when a mysterious mortal acquaintance appears, pursued by demon cheerleaders, things quickly go from bad to worse.
Time is running out for Percy. War between the gods and the Titans is drawing near. Even Camp Half-Blood isn’t safe, as Kronos’ army prepares to invade its once impenetrable borders. To stop them, Percy and his friends must set out on a quest through the Labyrinth — a sprawling underground world with surprises and danger at every turn.
We love blueberries at our house, especially since they are called superfoods, which means they are packed with nutrients and health benefits. Blueberries are low in calories and high in nutrition. They are believed to contain the highest antioxidant capacity of all commonly consumed fruits and vegetables. Blueberries may lower blood pressure and may also help prevent heart disease.
Our Percy Jackson and the Olympians Blue Pancakes recipe is very simple to make. The best part is the opportunity to get my girls involved in the process. I love those WELLthy MOMents in the kitchen and cherish them whenever the opportunity presents itself.
Ingredients:
- 1 Egg
- 1 1/4 cup milk
- 1 tbsp vanilla extract
- 4 tsps Baking Powder
- 1 cup pancake flour
- 1/2 cup blueberries
- A few drops of No Artificial Dyes Watkins Blue Food Coloring
Put all the ingredients, except for the blueberries, in the blender and mix. Add the blueberries to the mix. Spray a pan with oil and pour a scoop of the batter. Turn when it starts bubbling. Serve warm and top it with some more blueberries. Drizzle with maple syrup and Voila! Bon Appetit! All I can say is that our Percy Jackson and the Olympians Blue Pancakes were a hit and when you add summer reading in the midst and happy blue tongues, you have yourself one formula for the perfect summer day!
