
I love salmon for how easy it is to make so it was my choice for Kale and Quinoa Salad Recipe.
Ingredients:
- 1 bunch Kale, chopped
- 1 cup cooked Quinoa
- 1 cup baked Salmon
- 1 small red Onion, sliced
- 2 small Tomatoes, diced
- 1/2 cup chopped Pecans
- 1/2 cup grated Parmesan cheese
- 1/3 cup Italian Dressing
Cut kale into small strips. Â Massage kale with the Italian dressing. Â Cover and refrigerate for 30 minutes. Â Add in the quinoa, salmon, onion, tomatoes and pecans. Â Top with parmesan cheese and serve.
Kale and Quinoa Salad Recipe is always a hit with my family. Â My girls helped out with the onions and tomatoes. Â They could not believe how easy it was to make it. The recipe took about 30 minutes to make. Â This is my formula for a winning family meal, especially during the summer months.
While the kale was in the refrigerator, I seasoned the salmon with my GPS of garlic powder, black pepper and sea salt. Â I added some mustard and put in the oven at 400 degrees for 30 minutes. Â The quinoa takes about 30 minutes also to cook. Â The girls were in charge of chopping the onion and tomatoes. Â By the time they were done, dinner was ready.
Kale and Quinoa Salad Recipe tastes even better the next day. Â I wanted to enjoy for lunch the next day so I planned the servings accordingly.
