Kale and Quinoa Salad RecipeKale and Quinoa Salad Recipe is what the summer days here in Connecticut call for.  I was craving a kale dish and this recipe was the yummy result.  Any healthy and yummy recipe made in 30 minutes or less is truly this mom foodie’s goal.

Kale and Quinoa Salad RecipeI love salmon for how easy it is to make so it was my choice for Kale and Quinoa Salad Recipe.

Ingredients:

  • 1 bunch Kale, chopped
  • 1 cup cooked Quinoa
  • 1 cup baked Salmon
  • 1 small red Onion, sliced
  • 2 small Tomatoes, diced
  • 1/2 cup chopped Pecans
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup Italian Dressing

Cut kale into small strips.  Massage kale with the Italian dressing.  Cover and refrigerate for 30 minutes.  Add in the quinoa, salmon, onion, tomatoes and pecans.  Top with parmesan cheese and serve.

The recipe took about 30 minutes to make.  This is my formula for a winning family meal, especially during the summer months.

Kale and Quinoa Salad RecipeWhile the kale was in the refrigerator, I seasoned the salmon with my GPS of garlic powder, black pepper and sea salt.  I added some mustard and put in the oven at 400 degrees for 30 minutes.  The quinoa takes about 30 minutes also to cook.  The girls were in charge of chopping the onion and tomatoes.  By the time they were done, dinner was ready.

Kale and Quinoa Salad Recipe tastes even better the next day.  I wanted to enjoy for lunch the next day so I planned the servings accordingly.
