How To Make The WellthyMom’s Perfect Vegan Summer Salad


Whole Foods Market Fairfield InstaMeet Connecticut EditionI had the honor to be part of the InstaMeet Connecticut Edition, hosted by Whole Foods Market in Fairfield County.  The highlight of the Instameet was how to make the WellthyMom’s Perfect Vegan Summer Salad from beets, blueberries, carrots and chickpeas, quinoa and red peppers.  As I was preparing for the event, I came across a salad guide on Pinterest by reciperehab.com and this helped so much in creating this colorful an nutritious summer Salad.

There are 7 parts to build WellthyMom’s Perfect Vegan Summer Salad.

  1. Pick a base: Spinach, Cabbage, Kale, or Romaine Lettuce.  My base green of choice for this salad was Kale.  I love kale for its antioxidant, anti-inflammatory and anti-cancer health benefits.  Kale is also a superfood because it’s packed of nutrients.
  2. Add extra greenery: Avocado, Cucumber, Broccoli or fresh Herbs.  My extra greenery of choice is Avocado.  I grew up in Cote D’Ivoire, West Africa eating avocado and it’s the perfect addition.  Avocado helps with healthy skin and eyes.  It also aids in digestion.
  3. Add a pop of color: Carrot, Sweet Peppers, Red Beets, Tomatoes.  I choose carrots, red peppers, beets and blueberries to add a pop of color to the salad.  Did you know that beets help against heart disease, birth defects and certain cancers like colon cancer?  Health definitely starts in what we eat.
  4. Give it some crunch: Apples, Nuts, Seeds.  I omitted the nuts because an audience member is allergic to it.  My choice would have been pecans and pepitas.  They add so much yummy crunch to salads.
  5. Mix in healthy extras: Quinoa, Edamame, Dried Fruits, Cheese.  My favorite healthy extras for this Vegan Summer Salad are quinoa and edamame.  Quinoa is a superfood and full of health benefits while edamame has high protein contents.
  6. Add extra protein: Shrimp, Chicken, Fish, Beans.  My choice for WellthyMom’s Perfect Vegan Summer Salad is chick peas because it helps support digestive tract function, lowers cardiovascular risk and supports better blood sugar regulation.
  7. Don’t Forget to dress it up.  My dressing choice for WellthyMom’s Perfect Vegan Summer Salad is Balsamic dressing and Voila.
